Prepare the Noodles: Soak the wide rice noodles in warm water until they become pliable. Drain and set them aside.

Marinate the Chicken: Thinly slice the chicken and marinate it in a mixture of soy sauce and cornstarch. Allow it to sit for a few minutes to infuse flavor and achieve a velvety texture.

Sear the Chicken: In a hot pan with some cooking oil, sear the marinated chicken until it becomes browned and cooked through. Remove the chicken from the pan and set it aside.

Aromatics with Garlic: In the same pan, add minced garlic and sauté until it becomes fragrant, creating a flavorful base for the sauce.

Cook the Chinese Broccoli: Add the Chinese broccoli to the pan with the garlic. Stir-fry until the broccoli becomes tender yet remains vibrant.

Incorporate the Noodles: Add the soaked wide rice noodles to the pan with the other ingredients. Gently stir-fry to combine them.

Create the Pad See Ew Sauce: In a separate bowl, mix together Golden Mountain Sauce, oyster sauce, fish sauce, dark soy sauce, regular soy sauce, and one beaten egg. This will be the Pad See Ew sauce.
