To create this incredible seared Tilapia Fillet, gather the following ingredients:

  • 4 Tilapia fillets (about 6 ounces each)

  • 4 large leeks, white and light green parts only

  • 2 tablespoons olive oil

  • 2 tablespoons unsalted butter

  • Salt and white pepper, to taste

  • 1 cup heavy cream

  • Coral Tuile (for garnish)

Seared Tilapia Fillet Preparation:

Preparing the Tilapia: Season the Tilapia fillets generously with salt and white pepper. In a skillet, heat olive oil over medium-high heat until shimmering. Gently place the seasoned Tilapia fillets into the hot skillet and sear for 3-4 minutes per side, or until they develop a golden crust and are cooked through. Set aside and keep warm.

Leek Preparation: Clean and slice the leeks into rounds. In a separate saucepan, melt the unsalted butter over medium heat. Add the sliced leeks and sauté until they become soft and translucent.

Creating the Puree: Transfer the sautéed leeks to a blender, add the heavy cream, and blend until you achieve a smooth and velvety puree. Season with salt and white pepper to taste.

Garnishing with Leeks: Julienne a portion of the remaining leeks and blanch them briefly in boiling water to soften. Drain and set aside.

Coral Tuile Preparation: Optionally, you can create a delicate Coral Tuile for an artistic touch. Shape the tuile batter into coral-like structures and bake until crisp.
